Carbquik Recipe: Hermit Cookies

1/4 cup shortening
1/2 cup Splenda or assorted sweeteners
1 tsp. blackstrap molasses
1 egg
3/4 cup Carbquik
1/2 cup flaxseed meal (I used Golden)
1/2 tsp. baking soda
sprinkle of salt
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. ground cloves
1/4 cups raisins (optional)
1/2 cup chopped walnuts


Preheat oven to 325
Beat together shortening, sweeteners, molasses, and egg until smooth. Stir in remaining ingredients. Mix until combined.
Forminto 1 inch balls and place on sprayed cookie sheet leaving 2 inches apart.
Bake about 12-16 minutes until cookies are rather firm on the top. Let cool about 10 minutes on the pan. Then carefully remove them to a rack to cool.
