Carbquik Recipe: Impossible Zucchini-Tomato Pie


2 cups zucchini -- sliced
1 cup tomato -- fresh, chopped
1/2 cup chopped onion
6 ounces pancetta
1/3 cup parmesan cheese -- grated
1 1/2 cup Carb Countdown 2% Milk -- 2% or your choice
3/4 cup Carbquik
3 whole eggs
1/4 tablespoon pepper


Heat oven to 350 degrees. Spray pie plate with Pam. Saute pancetta and drain on paper towel.
Add to pan zucchini, and onion cook until tender. Place in bottom of pan. Add tomato and sprinkle with cheese.
Process eggs, milk and Carbquik in blender about 15 seconds. Pour into plate.
Bake until light golden brown and knife inserted in center comes out clean - about 30 minutes.
