Carbquik Recipe: Impossible Chocolate Creme Pie

2 eggs
1 cup Carb Countdown 2%
1/4 cup butter -- softened
2 ounces unsweetened baking chocolate -- melted
artificial sweetener -- equivalent to 1 cup of sugar
1/2 cup Carbquik


Preheat oven to 350F. Grease a 9-inch pie plate; set aside.
Place all ingredients in blender container. Cover and blend on high for 1 minute.
Pour into plate.
Bake until no indentation remains when touched lightly in center, about 30 minutes.
Cool completely.
Serve with sweetened whipped cream, if desired.
