Carbquik Recipe: Coffee Cake

Ingredients:
Topping:
1 cup almond flour
2 teaspoon cinnamon
1/2 cup splenda (or use ½ cup erythritol and 14 drops liquid splenda)
1/2 stick butter
Cake:
8 oz cream cheese
1.5 stick unsalted butter
4 eggs
1 tablespoon vanilla extract
1.5 cups splenda (or 1.5 cups erythritol and 43 drops liquid spenda)
3 cups Carbquik
1/2 teaspoon baking powder
Instructions:
Preheat oven to 350 degrees.
Blend topping ingredients just until crumbly. Set aside.
Microwave cream cheese and butter to soften. Stir in eggs and vanilla extract, mixing well. Add splenda, carbquik and baking powder and stir. There may be a few small lumps. Pour batter into cupcake pan. Should make 24 cupcake size coffee cakes.
Sprinkle topping over and bake for 25 minutes.
